Christmas Reindeer Pancakes (make 10 reindeer pancakes)
3 eggs, separated
1 2⁄3 cups buttermilk
1 1/4 teaspoons baking soda
2 teaspoons baking powder
1⁄2 teaspoon salt
1 1⁄2 cups flour
2 tablespoons sugar
4 tablespoons butter, melted

Garnish
10 maraschino cherries (reindeer nose)
10 pieces sliced marshmallows (reindeer eyes)
1 tube chocolate icing (reindeer pupils)
10-15 pieces bacon, cooked & cut in half (reindeer antlers)

Pancakes
In a bowl, beat the egg yolks until smooth. Slowly beat in the buttermilk and baking soda. In a separate bowl, sift paking powder, salt, flour and sugar. Slowly mix remaining dry ingredients into buttermilk mixture. Add melted butter and mix well.  In a separate bowl, beat egg whites until stiff peaks form. gently fold egg whites into batter until completely incorported.

Allow batter to stand at room temperature for 15-20 minutes. When ready to cook, heat well oiled griddle or pan up over medium high heat. When hot, slowly ladle batter to form the reindeer's face. If there is room in the pan, form two smaller pancakes in the shape of reindeer ears. Continue making pancakes.

Assembly
Assemble pancake pieces to resemble a reindeer face with ears. Garnish using a maraschino cherry for the nose. Cut Marshmallows in 4 thin slices for the reindeer eyes. Use chocolate icing for the pupils. Use bacon pieces for antlers and for a mouth (optional)
