Kawika Kahiapos Char Siu Chicken & Pork Sliders
I first met Kawika in my radio hay day and always loved his sound, his music her persona. He is one of Hawaii’s greatest Singer songwriters and has a resume to brag about. He is a Grammy award winner, Hoku award winner and has played with some of the greatest on stage an on there albums.
Kawika has been a part of over 80 recording projects working with names like Jack Johnson, Kelly Boy Delima and Naleo. His slack key skills are one of Hawaii’s best and his voice is golden.
I’ve been trying to get him on our show for 3 seasons now and with his busy schedule we are honored to have him in our kitchen this week. I wasn’t surprised when he said he could cook and his char siu chicken and pork sliders made with his own homemade char siu sauce were over the top.
Char Siu Sauce
1 cup Aloha shoyu
1 ½ cups sugar
1 - 2 cubes Chinese red bean curd
1 cap whiskey
½ teaspoon Chinese 5 spice
¼ cup hoisin sauce
1 tablespoon Hawaiian salt
Red food coloring optional
2 lbs chicken thighs
2 lbs pork butt, sliced into 6”x 2” strips
1 package buns
1 package coleslaw mix
1 cup mayo
3 tbs ketchup
1 tbs soy sauce
1 tbs oyster sauce
3 tbs sesame oil
Fried Won Ton Pi
Char Siu Sauce
Mix all ingredients in a bowl until all of the ingredients are mixed well and the sugar is completely dissolved. Marinate chicken thighs and pork overnight. Cook chicken and pork on grill and set aside until ready to serve.
Mix ingredients in bowl and set aside in refrigerator until ready to serve.
Take your favorite rolls and stack a chicken and pork on each roll. Top with cabbage, dressing and garnish with crispy wonton chips.
