Papahana Kuaolas Limu Namasu

This week we had Papahana Kuaola in the kitchen for a special edition of Cooking Hawaiian Style presented by Royal Hawaiian Center and they took us back to our roots with their cooking. Kealoha Domingo made one of my favorite dishes: limu namasu which reminded me of how my Tutu would always make for our beach outings.  

 

Papahana Kuaola is part of the Heeia Ohupuaa starting from up the mountain side. They teach and educate the community about the land and their loi’i’s and what’s growing on the land. Today we have a simple limu namasu salad that is perfectly pickled. Mahalo to Kealoha and Keoni for sharing their stories and recipes with us.

Ingredients: Print   Add to cart
US Metric

1/4lb. limu manauea
1/4 cup round onion, fine julienne
1/4 cup rainbow carrot, fine julienne
1/2 cup akulikuli kai (pickleweed)
1 cup kai n?oi (chili pepper water)
1 cup rice vinegar
1 cup simple syrup
 


Cooking Process:

Clean limu thoroughly and combine all ingredients in a bowl. Chill in refrigerator until ready to serve.
