

IL Lupino: Chef Diego PacurucosTartare Di Tonno
Looking for some good Italian food Il Lupino in the Royal Hawaiian Center can be found on the bottom floor right next to the stage at the Royal Grove. They have a wide variety of wines, a nice bar and some great Italian food. Some of their signature Italian dishes incorporate local ingredients.
Chef Diego Pacuruco joined us in the kitchen to make his version of Tartare Di Tonno (Ahi Tartar). This is great example of an Italian dish made with a local flare guaranteed to impress your friends so cut this recipe out and put it on your refrigerator.
5 ounces fresh ahi, minced
1/2 teaspoon salt
1 teaspoon chives, chopped
2 tablespoons round onion, diced
1/2 avocado
½ avocado,
4-5 fresh arugula leaves
toasted bread
Apple Ginger Vinaigrette
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspon fresh lime juice
2 tablespoons fresh apple, skinned
1/4 teaspoon ginger, minced
1 teaspoon honey
salt and pepper to taste
Tartar Di Tonno
Mix ahi, salt, chives, round onions and 2 tablespoons ginger apple vinaigrette in bowl and mix well.
Ginger Apple Vinaigrette
Put all ingredients in blender and blend well. Set aside in refrigerator until ready to use.
Assembly
Using a 4" stainless steel mold (optional). Add Avocado layer, then fresh arugula, then top with Ahi mixture. Push mixture tightly into mold using a spoon to compress mixture. Remove mold and serve chilled. Garnish with additional vinaigrette, fresh cracked pepper and toasted bread.
**If you don’t have a mold, you can make one using a soup can or layer the tartar in wine or parfait glass.
