Chef Ake - Noi Thai - Yellow Curry Crab
One of my favorite Thai restaurants is located in the Royal Hawaiian Shopping Center called Noi Thai Cuisine. Chef Ake shared some of his talents with us making some of Noi's signature dishes. This restaurant not only known for their authentic Thai dishes, but the decor and ambience is something to experience.
They also have a master carver who designs decorative fruit and vegetable masterpieces that look like a piece of art enhancing the dining experience further. Today, Chef Ake shares his recipe for yellow curry crab.
Yellow Curry Crab
2 tablespoons vegetable oil
5 tablespoons yellow curry paste
¼ cup coconut milk
1/8 teaspoon salt
1 tablespoon palm sugar
2 tablespoons fish sauce
¼ cup betel leaves
4 ounces crab meat
2 snow crab claws (garnish)
Heat pan with oil over medium high heat. Add curry paste to hot oil to release the flavors. Add coconut milk, salt, palm sugar and fish sauce. Stir sauce until ingredients are well incorporated and slowly add crab meat. Cook for a couple minutes to combine flavors.
For service, cut betel leaves and place on bottom of serving bowl. Pour crab curry into serving bowl and garnish with crab claws.
