Kanoe Gibsons Key Lime Pie

This recipe is truly the best key lime pie i have ever tasted. I always liked Key Lime Pie but never found one that satisfied me until this amazing recipe by former miss Hawaii Kanoe Gibson. Enjoy and share!

US Metric

CRUST:
1 stick butter, melted
1 cup flour
1/4 cup brown sugar
1/2 cup chopped macadamia nuts

 

PIE FILLING:
2 cans sweetened condensed milk
1/2 cup sour cream
3/4 cup key lime juice
Zest from one lime

 

FRESH WHIPPED CREAM:
1 cup cold heavy whipping cream
2 tablespoon granulated sugar
1 teaspoon vanilla bean paste (or vanilla extract)


Cooking Process:

CRUST:
Food process all ingredients well until dough is formed. Press dough into a10 inch pie pan. Bake at 350 degrees for 15 minutes. Cool completely.

 

PIE FILLING:
Mix all ingredients wel and pour into pie crust. Bake at 350 for 10 minutes, until tiny pinhole bubbles burst on surface. Do not brown. Refrigerate for at least an hour before topping with whipped cream.

 

FRESH WHIPPED CREAM:
Place mixer bowl in freezer for 20 minutes to chill. Mix ingredients on high speed until stiff peaks form (approximately 1 minute). Do not over beat. Top pie with whipped cream and garnish with lime zest.
