Grass-fed Kualoa Beef Nigiri with Scallion Paste

This is one of the amazing dishes. Beef Nigiri topped with scallion wasabi paste works really well with sushi rice. Sweet, savory and these beautiful slices of beef nigiri will melt in your mouth. Delicious!!

US Metric

2 ounces Beef Lean Cut
1 cup cooked sushi rice
¼ cup rice vinegar
½ teaspoon sugar
½ bunch scallion
½ teaspoon sesame seeds
1 teaspoon wasabi powder
¼ cup Aloha shoyu
1 Tahitian lime, juiced
1 piece ogo (seaweed)


Cooking Process:

Block off and slice beef very fine. Set aside.

 

Steam sushi rice, once cooked, add into bamboo bowl. Add vinegar and sugar into small sauce pot and simmer over medium heat. Once sugar is dissolved, remove from heat and add mixture to rice. Using a wooden paddle, mix ingredients together and set aside covered. Cut scallions fine and place into pestle bowl. Add sesame seeds and wasabi powder and mash into a paste. Add shoyu lime juice and ogo into pestle and continue to mash and strain.

 

Form sushi rice into small rectangular, bite-sized pieces and place beef over the rice and shape. Brush with ponzu and top with scallion wasabi paste.
