Chef Rene Cabas Gourmet Madeleine Cookies

Chef Rene Caba of The Hau Tree Lanai Restaurant at The New Otani Kaimana Beach Hotel shares her recipe for gourmet madeleine cookies made with Hawaiian madadamia nuts.  This is a classic cookie flavored with orange zest and chocolate.  If you get a chance, be sure to visit the New Otani Kaimana Beach Hotel and tell them that Cooking Hawaiian Style sent you!

Ingredients: Print   Add to cart
US Metric

2 large eggs
2/3 cups sugar
1 teaspoon vanilla extract
1/2 teaspoon grated orange peel
1 teaspoon baking powder
1/2 cup cocoa powder or melted chocolate
1 pinch of Salt
1 cup all purpose flour
1/2 cup Hawaiian macadamia nuts, chopped
10 tablespoons unsalted butter melted & cooled
powdered sugar for dusting


Cooking Process:

Preheat oven 375 degrees
Butter and Flour Madeleine pan

Using electric mixer beat eggs, 2/3 c sugar in large bowl just to blend. Add vanilla, grated citrus peel & salt. Add flour, Macadamia nuts & Cocoa Powder; beat just until blended. Gradually add cooled melted butter in steady stream, beat just until blended. Spoon 1 Tsp of batter into each indentation in Madeleine pan.

Bake until puffed & brown. 10-15 minutes. Cool cookies for 5 minutes. Gently remove from pan. Dust cookies with powdered sugar (optional).
