Thai Loco Moco
1 egg, fried sunny side up
1-2 tablespoons cooking oil
1 pound ground pork

Special sauce:
1 stalk lemongrass, crushed
3 cloves of garlic, minced
4 pieces of shallots, mince
4 Thai chilies, minced

Stir Fry
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/2 cup onions, diced
1 tablespoon oyster sauce
1 teaspoon fish sauce
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1/4 cup of stock
1 teaspoon sugar
1/2 cup of holy basil
4- 6 ounces cooked Jasmine rice


Cooking Process:

Heat wok with 1-2 tablespoons cooking oil. When oil starts to smoke, add ground pork and cook until browned. Remove ground pork from wok and set aside for later. In the same wok, add an additional teaspon of oil if needed and allow wok to get really hot. add aromatics: bell peppers, onions. Cook for 1-2 minutess. Add pork back to wok and season with oyster sauce, fish sauce, light soy sauce dark soy sauce, stock, sugar, holy basil. Stir for another minute to combine ingredients well and serve on a bed of rice. Top with a sunny side up fried egg and special sauce.

Special Sauce
Put all ingredients into a magic bullet or blender and blend until all ingredients are incorporated and form a sauce. Set aside in refrigerator until ready to use.
