Quesadillas made Hawaiian Style - filled with smokey kalua pork (pulled pork), ortega chilies and cheddar cheese.  Top with fresh tomato salsa or better yet, a fresh lomi salmon dip. When in a rush, I just pickup some pre-made lomi salmon and frozen kalua pig... trust me, its easy and just as ono!

Okinawan Sweet Potato Haupia Pie.  Haupia (how-PEE-ah) is a traditional Hawaiian pudding made out of coconut milk and pia (Polynesian arrowroot), but today's haupia is usually made with cornstarch as a thickener instead of pia.
