I've been craving the idea of a taro pancake that is light and fluffy and I came up with this adaptation of various recipes...  I think these came out quite well - they taste even better with coconut syrup.

I love theses poi mochi donuts... they remind me of gin doi.  The donuts are nice and chewy with a nice crisp outer crust.  I want to make a batch using coconut milk instead of water and coconut flakes in the dough.

Quesadillas made Hawaiian Style - filled with smokey kalua pork (pulled pork), ortega chilies and cheddar cheese.  Top with fresh tomato salsa or better yet, a fresh lomi salmon dip. When in a rush, I just pickup some pre-made lomi salmon and frozen kalua pig... trust me, its easy and just as ono!

This is one of those really simple recipes that really exemplifies what Hawaii is about.  You have a potentially mexican dish, topped with Korean-style kim chee shrimp on a bed of lettuce and lomi tomato vinaigrette (Hawaii spin on salsa)...  Fun!

If you are like me, I went crazy over cronuts...  a cross between donuts and croissants.  Brilliant!  I wanted to try this recipe with a coconut haupia cream instead of the regular pastry cream and it turned out fabulous!

Coconut and shortbread cookies to me go hand in hand...the rich butter taste of shortbread enhances the flavor of coconut.  If you have the time, I would recommend allowing the dough to rest for 1-2 days for an intense, buttery shortbread.
