

Pork Vegetable Miso Stew
If asked, I would call this a cross between the Japanese Jonjiru (Pork Miso Soup with Vegetables) and Nishime (Japanese Vegetable Stew). Pork, tofu and lots of vegetables simmered in a miso rich dashi. It’s a perfect cold weather recipe and a soothing meal.





Pork Vegetable Miso Stew
½ lb. pork belly, thinly sliced
½ TB sesame oil
½ TB vegetable oil
1 small turnip, ½-inch cubes
1 medium carrot, peeled, ½-inch rounds
½ medium gobo (burdock root), peeled, ½-inch rounds, soaked, drained
½blk. konnyaku, ½-inch pieces
5-6c. dashi stock
2 TB sake
½ (21 oz.) blk. medium firm tofu, 1- inch cubes
5 TB whitemiso
In a large saucepot over medium heat; brown pork in sesame and vegetable oils. Add turnip, carrot, gobo, konnyaku, and cook 2 minutes. Add dashi and sake; bring to a boil. Skim surface ifnecessary. Reduce heat. Simmer 10 minutes. Add tofu; simmer 2-3 minutes until vegetables are cooked through and tender. Dissolve miso into stock. Serve immediately. Sevres 4.
