Thai Soba Chicken Salad

I enjoyed a similar salad to this Thai Soba Chicken Salad served at a famous buffet in Waikiki. On my way home, I stopped off at my neighborhood Asian Market for ingredients to re-create the yummy dish. All the familiar flavors of Thai cooking; served as a fresh, crisp and spicy salad. Don't be put off with the long list of ingredients as most are your staple pantry items. Really worth it !

Ingredients: Print   Add to cart
US Metric

1 (8-9 oz.) pkg. soba noodles, cooked according to package directions, drained

1 tsp. sesame seed oil

½ rotisserie chicken, bones removed, shredded

¼ small head green cabbage, shredded

½ c. green onions, chopped

¼ c. cilantro, coarsely chopped

¼ c. Thai basil, coarsely chopped

¼ c. mint, coarsely chopped

1 green jalapeno pepper, seeded, thinly sliced

Garnish: ¼ c. coarsely chopped roasted peanuts, lime wedges

Dressing:

1 TB ginger, peeled, grated

2 cloves garlic, grated

3 TB lime juice

3 TB Aloha shoyu

2 TB rice wine vinegar

2 TB patis

2 TB vegetable oil

2 tsp. chili garlic paste

2 tsp. palm sugar

1 tsp. sesame seed oil

freshly ground black pepper


how to serve:

In a mixing bowl; whisk together dressing ingredients well until sugar has dissolved. Set aside. In a large mixing bowl; toss soba noodles with sesame seed oil. Add chicken, cabbage, green onions, cilantro, basil, mint and jalapeno pepper. For service: drizzle with dressing. Garnish as desired with peanuts; serve with lime wedges. Serves 3-4.
