This is the famous chicken curry recipe created by The Willows restaurant in Honolulu, Hawaii. The chicken is simmer in a sauce flavored with curry, ginger, and coconut milk. One of the highlights was the variety of condiments that were served along-side this dish.

US Metric
  • 2 TB + 4 TB butter
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tsp. minced ginger
  • 1 Tb curry powder
  • 1 tsp. sugar
  • 1/2-1 tsp. salt , as needed
  • pinch white pepper
  • 4 c. coconut milk
  • 4 TB flour
  • 2 TB vegetable oil
  • 1 lb. boneless skinless chicken breasts
  • Condiments:
  • Mango Chutney, crumbled crispy bacon, shredded coconut, chopped peanuts, raisins, chopped hard cooked egg, chopped sweet pickles, chopped green onion

Cooking Process:

In a large skillet over medium heat; saute onion, garlic, and ginger in 2 TB of butter until onion is translucent. Stir in curry powder, sugar, salt and pepper. Blend well. Slowly pour in coconut milk, stirring constantly. Reduce heat. Simmer 20 minutes. Strain sauce into a saucepan. Keep warm. Into skillet; melt remaining 4 TB of butter. Stir in flour to make a roux. Bring curry sauce to a low boil. Add roux into saucepan, stirring constantly until thickened. Into skillet; saute chicken in oil until browned and cooked through. Add into curry sauce.

how to serve:

For service: serve curry over steamed basmati or white rice. Serve with condiments. Serves 2-3.
