Kale and Pork Soup

Kale is the new favorite greens of our farmers markets here. Locals are buying them up by bagfuls. Mainly due to their nutritional value and antioxidants. Several health food store locations have become known for their kale salads. I have always loved kale, most often eating it uncooked. This is a very simple and satisfying cold day soup.

US Metric

1 lb. boneless pork, cubed

salt and freshly ground black pepper

2 tsp. olive oil

1 large diced white onion

3 cloves garlic, minced

1 tsp. crushed red peppers

4 c. chicken broth

4 c. water

2 medium potatoes, peeled, ½-inch cubes, optional

½ medium bunch kale, chopped

Cooking Process:

Season pork cubes as desired with salt and pepper. In a large saucepot over medium heat; brown pork in oil until cooked through. Add onion, garlic and red peppers until onions are translucent. Stir in broth, water and optional potatoes; simmer 15 minutes. Reduce heat to low and add kale. Simmer 10 minutes until heated through and kale is cooked. Serves 4-6.
