Slow Cooker Pot Roast
Slow Cooker Pot Roast - browning the meat before putting it in the slow cooker brings out its flavor and color.
3-4 lbs. chuck roast
2 TB vegetable oil
3 medium potatoes, peeled, stew cut
2 large carrots, peeled, stew cut
1 large onion, wedges
2 stalks celery, stew cut
1 tsp. salt
½ tsp. freshly ground black pepper
½ tsp. onion powder
½ tsp. garlic powder
1 c. beef broth
In a skillet over medium heat; brown roast on all sides. Place vegetables in bottom of slow cooker. Stir in salt, pepper, onion powder and garlic powder. Top with roast. Pour in broth. Cover and cook on low setting 10 hours. Serves 6-8.
