Menma (Braised Bamboo Shoots)

This Menma is one of my favorite Ramen garnishes. Bamboo shoots are braised in a delicious and simple flavorful broth.

US Metric

1 c. fresh bamboo shoots, thinly sliced

1 tsp. sesame seed oil

1 ½ c. dashi

¼ c. mirin

2 TB Aloha shoyu

1 TB rice wine vinegar

1 tsp. salt

1/4 tsp. red pepper flakes, optional


Cooking Process:

In a saucepan over medium heat; stir fry bamboo shoots in oil 1 - 2 minutes. Reduce heat to low and add all other ingredients and stir fry for additional 15 minutes or until most of the liquid is gone. Makes 1 cup. Serve as a garnish on saimin or ramen.
