Oriental Dashi II
A Japanese tradition in the islands is to begin the New Year with Soup made with mochi cakes and mizuna. This dashi recipe is the perfect stock for that dish.
5 c. water
6 dried shrimp
1 piece dried whole squid
2 small squares dashi kombu (thick dried kelp)
In a large pot, bring ingredients to a boil. Reduce heat and simmer for 30 minutes. Strain.
Makes 5 cups.
