No doubts this Strawberry Chichidango is a favorite family treat, no matter the occasion. Use whatever flavor of Jell-O you prefer.
1 (16 oz.) box mochiko flour (sweet glutinous rice flour)
6 oz. box strawberry Jell-O or other flavor
1 ½ c. sugar
12 oz. can strawberry blend nectar or other flavor, same as Jell-O
1 ½ c. water
Garnish: potato starch or kinako (yellow soy bean flour)
Preheat oven to 350 degrees; lightly spray a 13x9-inch baking pan with cooking spray. In a large mixing bowl; combine all ingredients; pour into prepared pan. Cover with aluminum foil, bake 55 minutes. Uncover; cool completely. Cut with plastic knife; roll in potato starch. Makes approximately 50 pieces.
