US Metric

1 ½ lbs. mahi mahi filets

oil as needed for frying

4 large eggs

1 (12 oz.) can beer

Coating:

1 c. all purpose flour

1 c. cornmeal

1 c. bread crumbs

1 tsp. salt

1 tsp. paprika

½ tsp. freshly ground black pepper


Cooking Process:

In a shallow dish; whisk together eggs and beer. In a separate shallow dish; combine coating ingredients. Dip fish in beer batter. Dredge in coating mixture. In a skillet over medium high heat; fry fish filets in oil until browned. Drian on paper towels. Serve with favorite sauce. Serves 3-4.
