Filipino Mungo Guisado (Mung Bean Soup)
A childhood favorite dish in Filipino households. A co-worker friend of mine would prepare this Filipino Mungo Guisado (Mung Bean Soup) often for us and share his stories of growing up and how his mom would make this for the neighborhood as this dish could go a long way.
1 c. green mongo (mung beans), soak in water 30 minutes, drained 1 c. chicharron or pork cracklings, crushed
¼ lb. boneless pork, thinly sliced
1 TB vegetable oil
2 garlic cloves, minced
1 medium onion, chopped
1 small tomato, chopped
6 - 8 c. chicken broth
1 c. ampalaya leaves (bitter melon leaves) or spinach
1 c. green mongo (mung beans), soak in water 30 minutes, drained
1 c. chicharron or pork cracklings, crushed
In a skillet over medium heat; brown pork in oil. Add garlic, onions, and tomatoes; cook 5 minutes. Add chicken broth. Bring to a boil. Add soaked mung beans. Bring back to a boil. Cover and simmer 1 hour. Add ampalaya leaves or spinach. Add more broth to desired consistency. Just before service; add cracklings. Serves 4.
