Slow Cooker “Baked” Potato Soup
A recipe created for slow cooking; it has all the components of a Baked Potato. Feel free to add additional garnishes as you wish; such as sour cream, chives and crispy bacon.
6 c. potatoes, peeled, diced
1 large onion, diced
¼ c. butter
5 c. water
2 c. milk
1 tsp. salt
½ tsp. freshly ground black pepper
¼ c. flour mixed with ¼ c. water
Garnish: 4 stalks chopped green onion, 1 c. shredded cheddar cheese
In a slow cooker; place all ingredients, except flour slurry. Cover and cook on High setting 4-5 hours or Low setting 8-9 hours. One hour before service; stir flour slurry into soup. Taste for seasoning. For service: top soup with green onion, bacon and cheese. Serves 6-8.
