

Mashed Ulu (Breadfruit)
This recipe by Chef ‘Olelo pa’a of Glow Hawai’i fits the bill for a simple and nutritious side dish.

1 mature green ulu
1/4 cup olive oil or butter
2 cloves garlic
Sea salt to taste
Chopped chives for garnish
Wash, peel and core ulu. Cut into 2 inch wedges. Place in a pot and cover with water, add garlic and salt to taste. Boil until tender (about 20 minutes). Remove ulu and garlic to a mixing bowl. Add olive oil or butter; start mashing. Add boiled water until it is a smooth and soft consistency. Garnish with chopped chives.
