Crust:
10 ginger cookies
1/4 cup oats
6-7 Tablespoons butter, melted
4 oatmeal cookies
1/4 cup ground macadamia nuts
1/2 tsp cinnamon

Filling:
9 ounces mascarpone
7 ounces cream cheese
2 eggs
½ tsp vanilla
1 tbp lemon juice
salt

Topping:
5 ounces mango puree (canned or fresh frozen is acceptable)
1 tbs lemon juice
1/2 packet of gelatin (half of .25 ounce packet)
1 pinch of cinnamon

you can puree your own frozen mangoes...be sure to taste to ensure that they are sweet enough after you puree...if not, add some sugar to taste.


Cooking Process:

Crust:
Mix all the ingredients on the blender;
Put the mixture in to a springform pan and press it well against the bottom.
Refrigerate while doing the filling.

Whip cheeses on the mixing bowl until is light. Add the sugar, the vanilla and the egg until everything is incorporated. Add the lemon juice and the salt and mix for another minute.
Take the form out of the fridge and cover the crust with the filling.
It will take about 20-25 minutes in a 325º oven, just until is light golden.

Topping:
Prepare the gelatin per the instructions on the box. In a bowl mix all other ingredients and for last pour in the gelatin and mix well.
