Lomi Lomi-Style Steamed Clams & Mussels

This is such an easy and simple dish but incredibly satisfying ... can be served as an appetizer or side dish.  The broth is to die for!

2 lbs Clams
1 lb Mussels
3 Tomatoes (chopped)
1/4 cup Sake (japanese rice wine)
1/2 Maui Onion (or sweet onion)
4 Stalks Green/Leaf Onion
Hawaiian Salt to taste


Cooking Process:

Lomi Tomato Mixture
In a bowl, combine tomatoes, onion, green onion, salt and allow to chill for 30 minutes minimum. Remove from refrigerator and gently massage tomatoes with your fingers to help integrate the juices and flavor.

Place the cleaned clams and mussels in a large pan, add sake. Cover the pan and cook over a high heat for about, 5 to 10 minutes or until all the clams and mussels open. Remove from heat and toss lomi lomi tomato mixuture in pot and serve immediately. You don't want to overcook lomi tomato mixture.
