Spam Kimchi Stew
This recipe provided compliments of Hormel, the makers of SPAM® Classic.
6 cups bite-size kimchi
1 tablespoon olive or vegetable oil
1 (12-ounce) can SPAM® Classic, cut into cubes
4 cups water
tofu, if desired
Hot, cooked rice
In skillet, stir-fry kimchi in oil 3 to 5 minutes. Add SPAM® Classic; stir-fry 3 minutes longer. Add water to skillet; bring to a boil. Reduce heat; simmer 10 minutes. Stir in tofu; bring to a boil. You can add the kimchi sauce from the bottle to the stew if desired. Serve stew with hot rice.
