Any type of mochi dish is a welcome addition to my family get-togethers. My younger sister Geri shared this recipe with us for New Years Day. A great disappearing pot luck dessert.

5 c. mochiko (glutinous rice flour)

2 1/4 c. brown sugar, firmly packed

2 (12 oz.) cans coconut milk

1 (coconut milk) can water

1 tsp. baking soda

1 (15-17.5 oz) can tsubushian (red bean paste)

Cooking Process:

Preheat oven to 350 degrees. Lightly grease a 9 x 13-inch baking pan. In a mixing bowl; combine all ingredients well. Transfer into prepared pan. Bake 1 hour. Cut with plastic knife. Serves 12-14.
