Landon’s Stuffed Mushrooms
An adaptation of my nephew’s creation. This delicious Landon’s Stuffed Mushrooms will surely be a big hit with your friends and family.
16 large button mushrooms, stems removed and minced
¼ lb. Portuguese sausage, casings removed, minced
2 bacon strips, minced
½ small onion, minced
2 cloves garlic, grated
2 Tb mayonnaise
1/4 c. parmesan cheese, grated
Salt, as needed
Freshly ground black pepper, as needed
In a skillet over medium heat; brown sausage, bacon, onion and garlic until meat is cooked through. Remove from heat; transfer into a mixing bowl. Add mayonnaise, cheese, salt and pepper. Spoon into mushroom caps. Place onto a baking pan. Broil 4-5 minutes until browned and heated through. Serve warm. Makes 16 appetizers.
