

Kim’s Simple Hot & Sour Soup
A quick and easy comforting Hot and Sour Soup. A great “make on the spot” recipe when someone is a bit under the weather. Healthy and delicious!





5 c. water
5 c. chicken broth
½ (16 oz.) blk. medium tofu, ½-inch strips
5 large shiitake mushrooms, soaked, stems removed, thinly sliced
1 ½ c. bamboo shoots, rinsed, drained, quartered, thinly sliced
¼ c. white vinegar
1 TB Aloha shoyu
½ tsp. white pepper
2 TB cornstarch, mixed with ¼ c. water
2 large eggs, beaten
½ tsp. sesame seed oil
3 stalks green onions, chopped, green parts only
In a large saucepot over medium high heat; combine water, broth, tofu, mushrooms, bamboo shoots, vinegar, soy sauce and pepper to a boil. Drizzle cornstarch slurry into soup; stirring until thickened. Drizzle eggs; while stirring. Top with sesame seed oil and green onions. Serves 6-8.
