Thai Sticky Rice Dessert With Mango
Simply wonderful tasting Thai dessert which is as good, if not better, than any sweet sticky rice with Mango available in Thai restaurants.
- 3 -4 ripe mangoes, peeled, thinly sliced, refrigerate
- 3 c. glutinous rice,rinsed, soaked overnight
- 1 c. coconut milk
- 3 TB sugar
- 1/4 tsp. salt
Prepare rice for steaming. Place in steamer basket lined with cheesecloth. Steam over boiling water for 20-30 minutes. In a small saucepan over medium heat, combine cooked rice and coconut milk; stirring until thickened. Add sugar and salt and simmer for 2 minutes.
Serve with chilled sliced mangoes. Serves 8.
