The quintessential dessert after any Chinese meal. This particular version is made with fruit cocktail, lychee and mandarin oranges.

US Metric

4 (.25 oz) env. unflavored gelatin

1 c.+1 c. water

1 c. sugar

1 (14 oz.) can sweetened condensed nilk

4 c. half and half

3 TB almond extract

1(15 oz.) can fruit cocktail, chilled, drained

1 (20 oz.) can lychee, chilled, drained

1 (15 oz.) can mandarin oranges, chilled, drained

Cooking Process:

In a saucepan over medium heat; stir gelatin and sugar in 1 cup of water. Stirring until sugar has completely dissolved. Remove from heat; stir in milk, half and half, almond extract and remaining cup of water. Transfer mixture into a 9x13-inch baking pan to cool. Refrigerate until set completely. Cut gelatin into desired size triangles or squares. For service: Transfer gelatin into serving bowl. Add fruit cocktail, lychee and oranges.  Serves 6-8.
