Geri’s Baked Crab & Potato Salad
This dish is great served either hot, warm or cold. Creamy and cheesy in every bite! Feel free to add as much imitation crabmeat as you desire.
8-10 medium russet potatoes, peeled, cubed
Water as needed
Salt as needed
8-16 oz. imitation crabmeat, shredded, as needed
1 c. mayonnaise
8 oz sour cream
2 c. cheddar cheese, shredded
3 cloves garlic minced
1 small onion, minced
salt as needed
freshly ground black pepper
2 c. milk
** Feel free to add some of your favorite items such as bacon, green onions, olives etc...
Preheat oven to 375 degrees. Lightly grease a large baking dish. In a large saucepot over medium heat, cover potatoes with water. Add salt as desired. Cook until fork tender, about 7-8 minutes. In a large mixing bowl; combine potatoes with remaining ingredients; except milk. Transfer into prepared baking dish. Drizzle with milk. Bake 45 minutes. Serve hot, warm or refrigerated. Note: Feel free to add as much imitation crabmeat as you desire. Serves 10-12.
