3 lb. whole fish (opakapaka, mullet or red snapper), cleaned
salt and freshly ground black pepper, as needed
1 c. fresh shiitake mushrooms, sliced
1/2 c. pickled ginger slivers
1/2 c. green onion, sliced
1/2 c. peanut oil
1 TB. sesame oil
3 TB Aloha shoyu
1/2 c. cilantro, coarsely chopped

Cooking Process:

Prepare steamer. Score fish diagonally to make diamond pattern on skin. Season with salt and pepper. Sprinkle shiitake mushrooms onto fish. Steam over medium high heat 15 minutes or until done. Sprinkle pickled ginger and green onion onto fish. Set aside. In a small skillet over medium high heat; warm peanut oil until smoking. Pour sizzling over ginger and green onions. Drizzle soy sauce and sesame seed oil over fish. Garnish with cilantro. Serves 4-6.
