Sweetie’s Clam Casino
My sister came up with this recipe after having eaten a similar dish at John Dominis Restaurant. She prepares this often when we have get together's and there is never enough. A crowd pleaser.
4 lbs. Manila clams, rinsed
Water as needed
2 tsp. Old Bay seasoning
8 strips of bacon, ¼-inch slices
1 small sweet onion, ¼-inch cubes
1 small bell pepper, seeded, ¼-inch cubes
2 TB butter
In a large saucepot over medium heat; place clams with 1 inch water and Old Bay seasoning. Bring to a boil. Reduce heat; simmer until clam shells open. Immediately remove from heat as soon as clam shells open. Cool. In a skillet over medium heat; saute bacon, onion and bell peppers in butter until onions are translucent. Let cool. Split clam shells in half, loosen clam meat off of shell and let meat remain in shell half. Onto broiler pan; arrange clam shells filled with clam meat. Top with spoonful of bacon mixture onto clam shell. Broil for 2-3 minutes, until bacon mixture has browned and bacon is crisp. Serve immediately. Great when served with baguette slices. Serves 6-8.
