Jalna’s Sour Cream Banana Muffins
Yet another favorite muffin recipe from my sister. Dense and flavorful, this one is enjoyed all throughout the day. Macadamia nuts added, as it is a favorite of my brother in laws.
2 c. all purpose flour
1/2 tsp. baking powder
3/4 tsp. baking soda
½ tsp. salt
½ c. butter
1 c. sugar
1 tsp. vanilla extract
2 large eggs
1 c. sour cream
3 ripe bananas, peeled, mashed
1 c. semi-sweet chocolate morsels
1/2 c. macadamia nuts, finely chopped
Preheat oven to 350 degrees; spray 18 muffin tins with cooking/baking spray. Onto waxed paper; sift together flour, baking powder, baking soda and salt. In a large mixing bowl, cream together butter and sugar well. Stir in vanilla and eggs one at a time. Whisk in sour cream and bananas. Add dry ingredients, chocolate chips and nuts. Divide mixture into prepared muffin tins. Bake 28-30 minutes. Makes 18.
