Hawaiian Style Cornbread

This is a Hawaii twist on an old classic. The idea was passed on to me by the site's creator Frank who wanted me to create a cornbread recipe infused with coconut milk..I though...what a great idea!!  It turned out nice and rich with a buttery coconut flavor.

  • 1/2 cup cornmeal
  • 1 1/2 cups cake flour
  • 2/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup melted butter
  • 1 1/4 cups coconut milk
  • 2 eggs

Cooking Process:

Mix ingredients in a bowl, pour into a 8"x8" baking pan and cook for 45-60 minutes on 350 degrees.
