Fried Rice Spam Musubi
You read that right! Spam Musubi with Fried Rice!
Spam Fried Rice Spam Musubi
- 1-day old rice
- 3 eggs, beaten
- green onions, sliced, separating the white parts from the green
- frozen carrots and peas (defrosted)
- la chang, diced
- button mushrooms, diced
- a wee bit of diced Spam
- salt to taste
I confess I don’t ever really measure most of the ingredients other than the egg. I just eye-ball everything and season to taste with kosher salt. My mom would sometimes use a bit of soy sauce in her fried rice but I prefer just salt.
To make my version of spam fried rice spam musubi, I use a wok on medium high heat. Like mom did, I scramble the eggs first with some Canola oil in a wok, just until it’s firm and still quite wet. Put it back in the bowl that you beat it in (mom insisted). Don’t worry, the egg will go back in to cook some more. Next cook the la chang until cooked through. I like a bit of charring on the edges. Set aside. Add the chopped mushrooms and cooked until soft, about 2 minutes. Add the white parts of the green onion and the carrots and peas. Cook for 1 minute. Add a little bit more Canola oil and wait about 30 seconds, then dump in the rice. Break up any clumps and stir fry until the rice is heated through. Add the Spam and the la chang and mix well. Add salt to taste. Add back the scrambled egg and break up into small pieces and mix well. Cook for another minute or two. Sprinkle top with green part of the green onion. And that’s it.
I used the whole nori wrap method to keep all the fried rice from falling out. It doesn’t stick like regular rice vinegar seasoned rice and it was a bit messy to eat but oh so good! About 3 each usually puts us over the top. We were full and happy. And we had leftover fried rice to go with some fried eggs the next morning. What can I say but life is good.
