Papaya Basil Vinaigrette
I had a version of this recipe on a salad from my neighborhood farmer’s market. I loved the flavor or the ripe papaya on my assorted greens.
1 lb. very ripe papaya, skin and seeds disgarded
1 clove garlic
3 stalks green onion, chopped
1 TB fresh basil leaves
1 tsp. Aloha shoyu
1 tsp. oyster sauce
1 tsp. salt
½ tsp. freshly ground black pepper
¾ c. olive oil
Combine all ingredients in a blender or food processor; process until smooth. Males 1 ¾ cups.
