Roast Pork Miso Ramen

I remember when a ramen truck was our after work go to place for a quick and soothing bite before heading home. This truck has since become one of the most popular ramen restaurants, just down the street from it’s original location. Today there are ramen shops all over our city and ramen makings are readily found in all supermarkets. This Roast Pork Miso Ramen is one of my favorites.

US Metric

10-12 oz dried ramen noodles, cooked according to package directions, drained


14-16 oz. fresh ramen noodles
water as needed

¼-1/2 # prepared roast pork, coarsely chopped

2 tsp. vegetable oil

2 garlic cloves, grated

1 TB ginger, grated

1 shallot, grated

3 stalks green onion, finely chopped
8 c. favorite dashi broth (or pork or chicken broth)
1-1 1/2 TB Aloha shoyu, as needed
4-5 TB red miso paste, as needed
pinch white pepper

2 tsp. toasted sesame seeds

2 tsp. sesame seed oil

Cooking Process:

If using fresh ramen noodles; cook in boiling water 2 minutes, drain well. Divide noodles into 2 -3 large serving bowls. Top with roast pork. Set aside. In a large saucepan over medium heat; sauté garlic, ginger, shallot and green onion in oil 1-2 minutes. Add dashi and soy sauce. Bring to a boil. Remove from heat and stir in miso paste, white pepper, sesame seeds and sesame oil. Taste for seasoning; adding additional soy sauce or miso as desired. Ladle dashi over pork and noodles. Serves 2-3.
