Stir Fry Spinach Soba
A very quick, simple and delicious noodle dish. I love the nutty flavor of the soba noodles prepared with toasty sesame seeds and fresh spinach.
8 oz. soba noodles, cooked according to package directions, drained
2 TB vegetable oil
2 cloves garlic, minced
2 tsp. fresh ginger, grated
2 tsp. sesame seeds, toasted, crushed
1 large bunch spinach, leaves
1/4 c. chicken broth
Garnish: thinly sliced pickled ginger, sesame seed oil
In a skillet over medium heat, sauté garlic and ginger in oil. Add sesame seeds, spinach and broth; heat through. Toss with soba. For service; garnish with pickled ginger; drizzle with sesame seed oil. Serves 2-4.
