I am a huge fan of “one-pot dishes.” Even more of a fan when we bring the pot to the table and everyone serves themselves around the pot; adding to the enjoyment of the meal. This Beef Hekka is such a dish!!

US Metric

2 TB vegetable oil

1 lb. top sirloin beef, thinly sliced

1-inch ginger, crushed

1 large onion, sliced

½ c. Aloha shoyu

¼ c. brown sugar

1 (10 oz) firm tofu, cubed

6 dried shitake mushrooms, soaked, stem removed, sliced

1 (8.5 oz) can bamboo shoots, rinsed, drained, thinly sliced

6 stalks green onion, 1 ½-inch pieces, white and green parts separated

1 (2 oz) bag long rice (bean thread noodles), soaked, drained, 4-inch length

½ bunch watercress, 1 ½-inch pieces

Cooking Process:

In a large saucepan over medium high heat; brown beef in oil. Add ginger and onion. Cook 2 minutes. Add soy sauce, brown sugar, tofu, mushrooms, bamboo shoots and whites of green onion. Bring to a boil. Reduce heat. Add green parts of green onion, long rice and watercress. Stir to heat through. Simmer 2 minutes. Serve with hot steamed rice. Serves 3-4
