Baked Hawaiian Sweet Bread French Toast

What better way to welcome your overnight guests than with this recipe. It’s a plan ahead dish, but worth all the effort. Feel free to use any of your favorite bread, bagels or croissants.

1 lb. favorite Hawaiian Sweet Bread, sliced (or bagels, cinnamon-raisin bread, croissants)

1/2 c. sugar

½ tsp. baking powder

6 large eggs

2 TB Amaretto liqueur

2 tsp. almond extract

1 ½ tsp. orange zest, grated

1 tsp. cinnamon

2 c. milk

Garnish: Confectioner’s sugar, syrup or fresh fruit, toasted & sliced almonds

Strawberry Apricot Syrup:

1 c. apricot jelly

1 c. strawberries, sliced

2 TB honey

2 tsp. cornstarch

Cooking Process:

Lightly butter a 13x9-inch baking pan. Arrange 6 bread slices in bottom of prepared pan. Slice remaining bread in half; arrange, overlapping onto bread. In a mixing bowl, whisk together remaining ingredients. Slowly pour over bread. Cover pan; refrigerate overnight. Bake uncovered in preheated 375 degree oven 30-40 minutes, until puffed and golden brown. In a saucepan over medium heat, combine syrup ingredients. Optional to puree in blender. Makes 1 ½ cups. Drizzle generously over toast. Garnish as desired. Variation I: Stuff extra thick slices of Hawaiian Sweet Bread with your favorite jam before placing in pan. Serves 6-8.
