Buffalo Chicken Deviled Eggs

This recipe takes the deviled eggs concept up a notch.  People always go crazy for these when I serve them up at parties!!  Its like a healthier version of buffalo wings...sorta..

  • 6 large eggs, hard boiled
  • 1/4 Cup Chicken, chopped
  • 3 Tablespoons Mayonnaise
  • 1-2 Tablespoons Frank's Hot Wing Sauce
  • 1 Tablespoon finely minced onion
  • 1 Tablespoon finely minced celery

Cooking Process:

Take 1/4 cup of pre-cooked chicken meat and cut into pieces or cubes.  I like to use leftover rotisserie  or roasted chicken.

Boil eggs in shell for about 10-15 minutes.   Remove shells and place eggs in a bowl.

Cut eggs in half and place yolks in a bowl and egg whites on a platter. Add mayonnaise, hot wing sauce, chopped chicken,minced celery and onions to egg yolks and mix well.  Add salt/pepper to taste.

Fill egg cavities with buffalo chicken mixture.

Garnish with blue cheese crumbles and hot wing sauce.  Best served chilled.
