Pork Spare Rib Soup
A simple yet flavorful soup that you can throw together at the last minute. I add whatever I have in the fridge ie. mushrooms, daikon, onions etc...
2 lbs. Pork Spare Rib, Cut in pieces, rinsed & drained
2 bunches Watercress, Cut into pieces, rinsed and drained
5 Garlic Cloves, Peeled
4 cups Water (enough to cover meat)
Ground white pepper
Bring a pot of water to a boil, boil the spare ribs for 3 minutes. Remove and rinse under running water. Drain and keep aside. Add 4 Cups water into a soup pot, add the spare rib and garlic and bring a boil, simmer for 60 minutes over low heat. Add the Watercress and simmer for 15 minutes. Add Salt/Pepper to taste.
