1 (15.5 oz.) can garbanzo beans, rinsed, drained

¼ c. green onion, chopped

¼ c. kalamata olives, pitted, coarsely chopped (save 1-2 for garnish)

3 cloves garlic, crushed

¼ c. tahini paste (sesame paste)

Juice of 2 lemons, as needed

2 TB olive oil, as needed

1 ½ tsp. salt

Freshly cracked black pepper

Garnish: olive oil, cayenne pepper, paprika, cumin

In a food processor, combine all ingredients. Process until smooth. Taste for seasoning adding additional olive oil or lemon juice as needed. For service; spoon into serving dish. Drizzle with olive oil. Garnish with kalamata olive in center, sprinkle with cayenne pepper, paprika and cumin. Serve with pita bread, pita chips or crudite. Serves 4.
