Lobster Black Bean
There are quite a few specialty Seafood Chinese Restaurants open lately in Honolulu.I love that they are featuring an old time favorite. Tender morsels of lobster cooked in a salty and savory sauce. A fancy dish prepared in a short amount of time.
1 1/2 lb. whole lobster, 1 ½-2-inch pieces
1/3-1/2 c. cornstarch as needed, for dusting
Vegetable oil, as needed, for frying
1 TB vegetable oil (from frying)
2 TB salted black beans, crushed
2 cloves garlic, minced
½-inch ginger, peeled, minced
4 stalks green onion, white parts only, chopped
1 TB Aloha shoyu
1 TB oyster sauce
1 TB Shaoxing wine
1 tsp. sesame seed oil
1 TB cornstarch mixed with 2 TB water
Garnish: green onions or cilantro optional

In a wok or deep fryer; warm oil. Place cornstarch in a shallow dish. Dust lobster pieces with cornstarch. Deep fry 2 minutes. Remove and set aside. Remove all but 1 tablespoon of oil from wok; discard. In a small mixing bowl; combine sauce ingredients; set aside. Into wok, stir fry black beans, garlic, ginger and white parts of green onion about 20 seconds. Stir in sauce ingredients. Bring to a boil. Add lobster into sauce and heat rhrough. Garnish with green onion. Serves 3-4.
