US Metric

1 boneless, skinless chicken breast, thinly sliced

1 large egg

Pinch salt

Pinch white pepper

1 TB Shaoxing wine

1 TB+ 2 TB cornstarch

2 TB water

5 c. chicken broth

1 (154 oz.) can creamed corn

1 tsp. salt

½ tsp. white pepper

Garnish: chopped green onion


Cooking Process:

In a mixing bowl; combine chicken, egg white, salt, pepper, wine and 1 TB of cornstarch. Set aside. In a small bowl; combine remaining 2 TB of cornstarch and water; set aside. In a large saucepot over medium high heat; combine broth, corn, salt and pepper. Bring to a boil. Stir in chicken mixture. Reduce heat; simmer 2-3 minutes. Stirring to break up chicken. Stir in cornstarch slurry until thickened. Garnish with green onion. Serves 3-4.
