Tutu’s Steamed Black Bean Spare Ribs

My friend’s grandmother’s ono “dim sum” style ribs. Simple to make, the result is tender, juicy and savory.

US Metric

2 lbs. spareribs, 1 ½-inch pieces

2-3 TB Hawaiian salt, as needed

2 TB salted black beans, soaked, drained, mashed

1 garlic clove, grated

1 TB Aloha shoyu

2 ½ tsp. cornstarch

4 stalks green onion, chopped

3 stems cilantro, chopped


Cooking Process:

Generously salt spareribs. Allow to sit 15 minutes. Rinse. Pat dry with paper towels. In a shallow dish; combine black beans, garlic, soy sauce and cornstarch. Marinate spareribs 20 minutes. Top with green onions and cilantro. Place in a steamer. Steam 45-50 minutes until tender. Serves 4.
