Wasabi Furikake Salmon
This Wasabi Furikake Salmon dish was a Friday Special at a favorite neighborhood restaurant of mine. If you didn’t plan ahead to get there early, you were usually out of luck.
2 lbs. salmon filets
2 TB Aloha shoyu
3?4 c. mayonnaise
1-2 tsp. wasabi paste, as desired
½ (1.7 oz.) favorite nori furikake (rice seasoning)
Rub salmon filets with soy sauce. Refrigerate 30 minutes. Preheat oven to 425 degrees. Lightly oil a 2-quart casserole dish or 8x8 baking pan. Place salmon snugly into prepared dish. In a mixing bowl; combine mayonnaise and wasabi. Spread mixture evenly over salmon to edges of dish. Sprinkle with furikake. Bake, turning dish as needed until golden brown and bubbly, about 20-25 minutes. Serves 4.
