Smoked Salmon Furikake Tofu Salad With Oriental Warm Cider Dressing

I love this salad my sister prepared in a unique way. The dressing reminds me of a typical Chinese Style Fish preparation, where it is warmed, you add the oil at the last moment; pouring the warm mixture onto your cold dish. Genius !

medium head romaine lettuce, coarsely chopped
1 (14 oz.) block tofu, drained, 1-inch pieces
¼ c. favorite nori Furikake (seaweed seasoning)
4 oz. smoked salmon, shredded
Warm Cider Dressing:
¼ c. apple cider vinegar
¼ c. agave nectar
1 tsp. salt
½ tsp. freshly ground black pepper
¼ c. sesame oil

Cooking Process:

In a mixing bowl toss tofu with furikake; set aside. Onto serving platter; arrange lettuce. Top with tofu. Place salmon on top of tofu. In a small saucepan, combine vinegar, agave nectar, salt, and pepper; bring to a boil. Remove from heat and add sesame and vegetable oils. Pour over salad just before serving.

Serve immediately. Serves 3-4.
